Pan Fried Doughnuts.

This yeast dough is perfectly versatile.  Once you make a batch you can make pizza crust, rolls, slider buns ANNNNND these doughnuts.

I always end up making doughnuts because I have 4 children….. I never set out to make doughnuts…… I set out to make buns or bread or something good and useful….  It’s my children (teenagers) who grab hunks of dough and make wonderful things like doughnuts with it.

And you should too.

I should warn you – this recipe makes A LOT of dough – please bake some rolls or pitas or slider buns today with all that wonderful dough!

These are by far the healthiest doughnuts you'll ever eat. Fresh whole wheat, coconut oil & honey. Did I mention they are fab? This recipe makes A LOT of dough. When I make this I make pizza crusts or slider buns along with the doughnuts. The crusts & buns freeze beautifully after baking.

First, grab your mixer and insert the dough hook.  Add the (very warm) water, honey, melted (warm) butter, and (very warm) milk to your mixer bowl.  Sprinkle the yeast into mixer (on the warm liquids).  Turn the mixer on for a few seconds just to mix the yeast in. Cover & let this sit for 10-15 mintues so your yeast can activate.  After the yeast is all foamy and bubbly you can add the eggs & give them a spin. Add 1/2 the flour & then add the salt.  Add the rest of the flour.

Add flour one cup at a time mixing after each cup so you can see the consistency of your dough.  When you get close to the 6 cup mark begin to pay attention to the sides of your mixing bowl.  Sprinkle in the flour slowly and watch what is happening to the dough.  I leave my mixer running on low as I sprinkle in flour.

Stop adding flour when the dough begins to clean the sides of the mixing bowl. Set your mixer on medium and let it knead your dough for 5 mintues.  Remove the dough hook & cover the bowl with a towel. Let it rest for 15 minutes.  Punch down” the dough.

To Make Doughnuts:

Add 1/2 cup coconut oil to skillet.  Heat on medium high.  Drop small amounts of the yeast dough into the hot coconut oil.  Cook until brown.  Flip to cook other side.  When perfectly brown on both sides….

Immediately toss the doughnuts into a prepared bowl of sugar & cinnamon (1/3 cup sugar & 1/2 tsp cinnamon).  And Enjoy!
