Avocado Cilantro Lime Dip or Spread
I’m not into diet trends, but if I had to pick an “eating style” that most aligns with my life it would be Paleo.
The Paleo Eaters, are eating a very healthy, whole food diet much like that of a farmer.
In fact, I am probably a pretty faithful Paleo eater with the exception of 2 things:
- I consume milk products from my cow.
- I consume whole grains that I mill myself.
If you have ever been on a Whole30 or tried a Paleo-style eating program you know that mayo plays a large role. This dip/ spread is avocado and mayo-based – so it’s Paleo-friendly and fantastic to boot.
I dip carrots in this. And bell peppers. And celery sticks. I bet some crispy potato chips would be pretty awesome in it toooooooo.
The recipe is thick. It is perfect for dipping and for spreading liberally on any sandwich.
Just imagine, toasted whole wheat slices of bread, piled high with thin-sliced fresh chicken, melted habanero-jack cheese, fresh lettuce, tomato and a thick layer of avocado-lime spread.
Goodness! The spicy melted cheese with this cool and creamy avocado spread. Yes!
It’s super easy to make. Grab a little bowl and mush up an avocado.
Add 1/2 cup of mayo & the juice from 1/2 a lime.
Whisk it all together and add 1 tsp salt.
Fill a measuring cup with fresh cilantro and dice it up. Stir it into the dressing and the dip is done!
Now go make a giant sandwich or grab some veggies to go with it.
So simple and so delish.
