Real mashed potatoes.
I love mashed potatoes. Easy. Yummy. Real food. Great side dish.
Here’s how I make fantastic mashed potatoes with no processed foods, no funny stuff, all real ingredients.
Peel (optional) & chop up 8-10 potatoes into 1 inch cubes. I make massive amounts of potatoes because it’s one of my children’s favorites. Left over mashed potatoes are gold. The potatoes can be from the grocery, Dattilos, or the garden.
Toss them into a pot & cover with filtered water.
Boil them until they are fork tender.
Do not over-cook them or you will have gummy, watery potatoes. Not good.
Once they are cooked, strain off the water.
I just made a batch of butter (like 10 minutes ago). So I am going to use this fresh butter in my mashed potatoes. It doesn’t get much more real than that.
I want 2 sticks, so I am weighing out 8oz.
Mix that in with the hot, strained potato chunks.
In it goes. I added 1 cup.
Salt. I needed to add 3 tsps of salt because my butter was cream approximately 20 minutes ago and it hasn’t been salted. If you are using salted butter you will only need 1 – 2 tsp salt (depending on how much you like salt).
1/2 tsp pepper & mix it all up. Some folks use only white pepper in mashed potatoes. I prefer the flavor of black pepper. Black specks don’t bother me.
I just don’t see any need to dirty extra pans. I’m gonna serve my mashed potatoes in the pot they were born in. I dot the top of my potatoes with some of that fresh butter.
In 10 minutes it will melt.
