This recipe is a treasure from an Italian cookbook originally published in 1931.  These thick, creamy potatoes do not contain any flour or cheese.  They are simple and spectacular.

The only ingredients are potatoes, onion, bacon, butter, stock, and cream.  A little salt & pepper for seasoning is all they need.

These should just be called "Potato Euphoria."
