Tis the season for crockpots and soup!
Some things to know about this week's menu:
We included beets, greens, and brussels sprouts to ensure you can take advantage of fresh, local foods.
I don't know about you but I still have ziplock bags filled with beets in my refrigerator and more beets still in the garden (covered up with straw to protect them from the cold). Believe it or not, beets are undeniably in season right now.
Also coming fresh from gardens and farms this January are cold hardy greens. Turnip greens, mustard greens, collard greens, and kale . . .
