Squash Casserole

This is the finest way to eat a squash.

Not kidding.

I love squash.  I like it sauteed on the stovetop.  I like it grilled.  I like it stir-fried.  I like it cooked to mush (the way my mother-in-law does it).

But this is my favorite way to eat squash.

It has a cheesy, gooey inside and a buttery, crispy topping.  I think it is as good as any cheesy potato casserole out there.  And it’s healthier & lighter because it’s a squash.

To make this – go pick (or buy) some squash.

Wash and cut into 1/2 inch cubes.

Dice 1 onion.

Heat butter in a giant skillet on the stovetop (over medium-high heat).

Add squash & onion to the skillet and saute until squash is just beginning to brown.  Do not cook completely, this will finish cooking in the oven.   You want the squash to still have a ‘bite.’

Remove from heat.

Add salt, pepper, cheese, and sour cream to the squash & onions (in the skillet).  Mix it up.

Pour into a greased casserole dish.

To make the Topping:

Melt 2 tablespoons of butter in a small bowl.  Add 3/4 cup of Italian bread crumbs and stir.

A quick way to make a crumb topping:  If you make croutons (which you should – recipe here). Put day old (or week old) croutons into a zip-top bag and smash them with a rolling pin.

Ta-Da!  Breadcrumbs!

Sprinkle the Italian bread crumbs on top of the casserole and bake 350-degrees 30 minutes.
