Wash and cut some fresh squash into 1/2 inch cubes.  Dice onion.   Heat butter in a giant skillet on the stovetop ( over medium-high heat).   Add squash & onion to the skillet and saute until squash is just beginning to soften and brown.  Do not cook completely, this will finish cooking in the oven.   You want the squash to still have a ‘bite.’

Remove from heat.   Add salt, cheese, and sour cream to the squash & onions (in the skillet).  Mix it up.  Pour into a greased casserole dish.

To make the Topping:

Melt 2 tablespoons of butter in a small bowl.  Add 1/2 cup of Italian bread crumbs and stir.

Sprinkle the Italian bread crumbs on top of the casserole (if desired) and bake 350-degrees 30 minutes.
