Roasted Winter Vegetables
Let's roast some winter veggies!
The only time invested in this dish is the peeling and chopping. Once it's all diced just toss the veggies with fat (oil) and seasonings and stick them in the oven.
Let's just talk about the cast I have participating in this dish tonight:
I am using sweet potatoes, turnips & carrots. You could also use parsnips or butternut squash for this dish.
