If you have fresh eggs and have hard boiled them you know what I’m talking about. They are impossible to peel. Impossible. If you do get the shell off, it is likely you will remove the whites of the eggs right along with the shell. And you’ll be standing in front of your kitchen sink holding a yolk.
I want hard boiled eggs. Not hard boiled yolks.
If you are like me and have had trouble peeling eggs – you’ll love these tips.
Technique #1 for Peel-able Hard Boiled Eggs
Seriously. It works perfect every time. Not only will you be able to peel your eggs, the egg whites will be more tender and you’ll have creamier yolks. What else could you want in an egg?
Here’s how I do it:
Use a metal steamer basket to suspend eggs above ½ inch of boiling water, steam for 10-12 mintues & you’re done.
If you don’t have a metal steamer basket or don’t know what a metal steamer basket is you can do what I did.
Wad up 3 balls of aluminum foil. Put them in the bottom of your large pan. Add 1/2 inch of water. Place a metal pie pan on top of the foil balls (the balls will suspend the pie pan above the water). Put your eggs in the pie pan & steam them for 10-12 mintues.
Technique #2 for Peel-able Hard Boiled Eggs
Many many folks boast that this works for them like a charm. I have had mixed results – but will agree that you are more likely to get the peels off with the baking soda than without.
Here’s how to use the baking soda method:
Add 1-2 teaspoons of baking soda to the water before boiling the eggs.
For perfect hard boiled eggs:
- Arrange eggs in the bottom of a sauce pan
- Add enough water to cover the eggs by 1 inch
- Add 2 tsp baking soda
- bring to boil & boil 10 minutes
- strain off hot water & cover with cold water
- Peel & enjoy
