I know the secret to chopping up strong onions without crying your eyeballs out of your head.
Unfortunately, I am not a person who needs 1 chopped onion for a recipe. I need 8. I usually make meals/ foods in bulk. I like to can which entails a boatload of onions (think spaghetti sauce, salsa, chutney). When I cook meals I like to double or triple the recipe so I have some to share, or freeze. So when I chop onions, I chop onions.
I like to use fresh onions straight out of my garden. They are fresh. They are beautiful. They are strong enough to melt the wax off a new car. Because of my fresh onions, I have spent many days in the kitchen crying off all my make-up and the top layer of my epidermis. I had to find a way to fight the onion fumes.
I found it.
My 7 year old took the blurry photo while I was busy chopping onions & not dying of onion-eyeball annihilation.
Yes, I wear a swimming face mask when I chop onions. It works. Your eyes will not even realize you are chopping onions. Your children will be complaining from across the room about their eyes burning and that the evil onion fumes are scorching their retinas.
But, your eyes will be in happy, face-mask bliss.
I don’t care how ridiculous I look. My eyeballs are happy and intact.
