Beet Salad with Feta and Lemon Vinaigrette
It's that time of year when lettuce is bolting and horribly bitter. At least the lettuce in my garden is.
There are a couple of things you can do to 'sweeten' the bitter lettuce.
- Grow red lettuce. It is more heat tolerant and always the last to bolt.
- Serve the bitter greens with a sweet, tangy dressing.
