Stir Fry Supper
I feel like part of my lot in life is to inspire simple dinners so you won’t order takeout or enter a drive-through.
I’m considering a new category called, “If You Hate to Cook.”
This would be the first recipe in that section.
There is no cooking involved. Just chop a few veggies and hand your hubs (or one of your kiddos) a platter of sausages.
That’s all.
And this is dag-um tasty! I don’t know why it happens – but it does. Sautee some onions & peppers in some oil with enough salt and you have something spectacular. It is ridiculous.
The first line of business is to get the sausages grilled. You can purchase some organic Italian, pork, or whatever you like.
My sausages are an invention of genius. My poor, poor processor. I walk in with my pigs and give ultimatums. No MSG, no nitrates or nitrites. I don’t want a bunch of additives shoved into the pork that I spent 4 months raising on organic food.
My processor is a good sport and last time I brought him a pig he offered to make some sausages for me. He said he had an idea… it involved cumin, sage, thyme, red pepper flakes, and fresh jalapeno peppers.
I said, “SOUNDS AMAZING!” and the man concocted the best sausages the world has ever consumed. I don’t know if he’ll ever be able to duplicate the magic formula, but it has been a good year and I don’t regret ordering 100 pounds of them. Delicious and guilt-free!
To begin this chef-friendly stir fry – hand someone a platter of sausages to grill.
Peel and slice a red and white onion.
Drizzle some olive oil in the bottom of a giant skillet and dump in the veggies. Salt everything well.
Sautee these on medium-high until the veggies begin to brown.
Slice the grilled sausages into bite-sized pieces and add them to the melody.
Sautee everything over low heat on the stovetop until the sausages are combined.
Isn’t this gorgeous?
Serve over rice and pat yourself on the back for a job well done!
Super Easy Rice Recipe:
- Turn your Instapot on Pressure Cook – High
- Add 1/2 diced onion & 3 tablespoons oil or butter into the bottom of the pot- cook until onions are soft
- Add 1 1/2 cups (rinsed) basmati rice
- Add 1 1/2 cups water
- Add 1 tsp salt
- Set Instapot to pressure cook on high for 6 minutes. When the timer ends let stay in the pot for 10 minutes. Release the pressure.
Serve!

- 4 colored peppers any colors (washed, cored & sliced)
- 1 red onion sliced
- 1 white onion sliced
- 2 lbs sausages grilled and sliced
- Salt
- olive oiil

Lop off the tops ff the colored peppers and slice them into long slivers.
