Marinated Flat Iron Steak

This is a homemade teriyaki steak.  It is a super quick, easy supper.

I have a general opposition to cooking a ‘piece of meat’ for everyone.  If DH is grilling – I don’t care.  He can fit 20 burgers on the grill at once.  Cooking a dozen pieces of meat is an entirely different predicament in a skillet on the stovetop.

If it is up to me to stand in front of the stove and cook 12 pork chops (4 at a time) – no thank you.

At the rental, we do not have a grill and lovely things like pork tenderloins and flat iron steaks have been making my life better.

I find it easier to cook one giant hunk of meat and slice it up for the entire family.  So easy.

THE MARINADE

To make the marinade, add 1/2 cup brown sugar (or turbinado) and 1/2 cup soy sauce (I use Braggs Liquid Aminos) to a zip-top bag.  Grate 2 cloves of garlic into the bag.  Zip the top closed and squish the bag to mix up the ingredients.

Rinse the steak and add it to the bag with the marinade.  Be sure the steak is completely covered.  Let this marinate overnight in the refrigerator (turn the meat once to coat both sides well).

To cook the Steak

Preheat oven to 350 degrees.

On stovetop heat a large castiron skillet to medium-high.  Add 2 tablespoons of oil or fat and brown the flat iron steak on both sides.

Insert a digital meat thermometer into the center of the steak and put the steak (in the castiron skillet) into the oven.  Bake until the steak is 125 degrees in the center.

Let the steak rest on the counter tented with a piece of foil for 10 minutes before slicing.

NOTE:  This is perfect for the grill too!  To grill:  Remove the steak from the bag of marinade and grill until the center is 125 degrees.

Slice and enjoy!!
