Welcome to my favorite way to cook.  The week begins with an enormous amount of meat and all the following meals are created using the leftovers from the first night.  This week's featured dish is a smoked pork butt.  I begin the week with one of our amazing, home-raised, pork butts.  Our hogs were quite impressive this year weighing in just under 400 pounds each. One of these butts will feed us for several days.  If your pork butt is on the small side you may want to smoke 2 . . .
