I love this tomato salad. It's like a caprese without the cheese. You could always toss in some mozzarella if you're feeling spunky.
The fresh tomatoes and herbs are what make this salad shine. The apple cider vinegar adds the perfect tangy-ness. There is just a touch of sweetness thanks to the honey.
This is my favorite way to eat fresh tomatoes.
I eat it several times a week when the tomatoes are, 'on.'
