I believe with everything in me if you take the time to grow potatoes, dig them up, slice them thin and fry them to perfection - you can eat as many as you want and it will never negatively impact your health.
All the energy, exercise, and work you are exhorting to produce homemade, potato chips outweighs any negative impact those crispy, salty bites of bliss can muster. At least, that's my perspective.
Oh, and I've got some potato-producing experience . . .
