This is one of those dishes that I only make in summer.
It would be perfectly delicious any other time of year, but in summer I have a surplus of cucumbers and spend lots of time outdoors. This means:
- I want to cook easy meals
- I want to eat what is coming out of my garden
- Fresh, bright foods hit the spot
Cucumbers in sour cream fit the bill. They are one of my favorite summer, side dishes.
Technically, this falls into the ‘salad’ department, but I often serve these and another salad with dinner.
On busy summer days this is one of those simple sides you’ll be glad to have in your arsenal. Grill some chops, slice some tomatoes & whip up this cucumber salad & dinner is served. So easy!
First, grab 2 cucs & slice them into coins.
Next, we are going to make the sour cream dressing.
- 1/3 Cup Sour cream
- 1 Tbsp Apple Cider Vinegar
- 2 Tsp Maple Syrup
- 1/2 Tsp Salt
Whisk it all together and fold in the cucumber slices.
Cover and refrigerate until ready to serve.
