Chicken Melts
Have you ever had a chicken melt? If you’ve eaten a tuna melt you get the idea. Same concept – just use chicken instead or tuna.
These make an easy lunch or dinner and they’re a fantastic way to use leftover chicken.
Cut chicken into bite sized pieces. Chop up 1 rib of celery and add to chicken. Add enough mayo to create spread. If you like grapes in your chicken salad, cut some in half and toss them in. If you like nuts – chop a few pecans and add those to the salad too.
Toast slices of bread. Top with chicken salad & some fresh ground pepper. Lay sliced tomatoes on salad spread and top with fresh grated cheddar cheese.
Broil on a bakers sheet until cheese melts. Serve immediately.
