Mexican Wedding Cookies

I know that they are perfect for any special occasion, but these just say “Christmas” to me because they look like snowballs.

This recipe is fantastic.  The cookies are buttery, flowing with pecans and not too sweet.

They truly melt in your mouth.

AND they are made with fresh milled (soft white) flour so they are almost health food!

Grab a medium bowl and soften the butter in it.  Whisk or use an electric mixer to cream in the confectioners sugar (yes, use confectioners sugar in the dough of this recipe).  Stir in the vanilla and water.  Add the flour, salt, and nuts & mix (or whisk) until blended.

Set the dough somewhere cool (like the refrigerator) to chill for an hour or more.

Roll the dough into balls and place on a baking sheet.

Bake for 15-20 minutes at 325 degrees.

Can I just point out that while other blogs have beautiful white cookies and loaves of bread, mine are always a dingy brown color?

I am actually very proud of my brown bread and cookies.  Their color is due to the fresh milled flour.  I always mill my own wheat (kernels or berries).

When you grind your own flour-

  1. it is packed with 40 vitamins and minerals
  2. it contains bran, fiber, & protein
  3. it won’t make your pants tight
  4. and it will make everything you cook a light brown color.

I gave up white bread and cookies a decade ago.  Whole wheat is better for me, and I think it tastes better.  To learn more about grinding flour go here.  If you want to start enjoying bread again, you should consider a membership.  You’ll get my 9-course breadmaking class where I’ll teach you everything you need to know to make your own healthy, homemade bread.  Learn more here.

Let the cookies cool.

Once cool, roll in confectioners sugar.

So beautiful!

XO,

Candi
